It has meat, beans, tomatoes, onions, garlic, and chili powder. So, it’s chili, right? Hold on, it’s not. Or is it? I don’t know. All I know is that it’s delicious, and I’m loving it on these cold days with lots of football to watch and the fire roaring in the fireplace.

In a nutshell, this soup has ground beef, pinto beans, onions, corn, canned fire-roasted tomatoes, and a whole bunch of taco seasoning. If we’re comparing soups, it’s actually a whole lot like the ever-popular Sante Fe soup, which is basically an open-all-the-cans-and-dump-them-in soup. If soups were placed in families, and chili and Sante Fe were part of the same one, this taco soup firmly belongs.

All to say, if you are looking to shake up your chili routine and add a new twist to the game, this is your soup. It’s easy and delicious. I highly suggest doubling it as it freezes well and thus makes a great thaw-heat-serve dinner for busy nights.

I would have all the toppings ready that you typically like to put on tacos, except lettuce. Serve them with this soup so that everyone can customize their bowl to create exactly what they prefer.

With your leftovers, you can make this taco salad! The soup will thicken overnight, mainly as it contains rice, so it’s perfect for this. If you wish to eat the soup as “soup” just add water or more beef broth to bring it back to a “soupy” consistency.

Ingredients
  

  • 1 lb ground beef I use 90/10 so I don't have to drain anything
  • 2 cups chopped yellow onion
  • 2 tbs minced garlic
  • 1 cup water
  • 4 tbs taco seasoning I prefer no-salt taco seasoning as the beans and beef broth have additional sodium and this way I can control the salt a bit better.
  • 2 14.5 oz cans Kroger 'fire roasted diced tomatoes, salsa style' This is found near the Rotel in canned vegetables.
  • 1 16 oz can pinto beans, not drained
  • 1 cup corn Frozen or fresh. Canned will work.
  • 3 cups beef broth
  • 1/2 cup long-grain white rice
  • optional: 4 oz can of diced green chilis
  • salt and pepper to taste

Optional Toppings

  • Shredded cheddar
  • Cilantro
  • Limes
  • Sour cream
  • Queso fresco
  • Tortilla strips
  • Chopped tomatoes
  • Chopped onions
  • Sliced jalapeños
  • Anything else that sounds good!

Instructions
 

  • Cook your ground beef is a large pan.
  • Once it's cooked through, add your diced onions and garlic and cook for 5 minutes.
  • Next, add one cup of water and 4 tablespoons of the taco seasoning mix. (I make my own seasoning mix and highly recommend making your own. As mine is salt-free, I'm not as worried about the extra sodium from the canned beans and beef broth making the end product too salty.)
  • Let cook down for a few minutes.
  • Add canned tomatoes, beef broth, corn, pinto beans, and rice. If desired, add a 4 oz can of diced chili peppers.
  • Cook for 20 minutes.
  • Serve with desired topping and enjoy!
